Falafels and flatbreads

A great, easy and healthy quick weeknight supper. When I get home from work I really can't be bothered to make anything that takes more than 20 minutes. These homemade falafels and flatbread with hummus and yoghurt are full of flavour, healthy and simple to make...or I wouldn't be bothering haha. Soft flatbread, creamy hummus, spicy crispy falafels with a dollop of greek yoghurt to cool it down - so tasty.


If you want to make them all you need to do is blend 1 can of drained chickpeas, with half a red onion, a whole chilli and a large fistful of parsley/coriander (I've used both and it's just as good with either). Then add 2 tbsp of olive oil and 1 tbsp of cumin. That's it. It takes about 2 minutes and smells so good.







Form them into balls then fry them in hot oil. I shallow fried mine as I wanted them to be as healthy as they could be without falling apart (which I find happens if you dry fry), but of course, do what you want. 


They are also super nice as burgers...



While your falafel balls/burgers are frying it's time to make the flatbreads. Again, really easy and quick or I would be buying them from a shop haha. Mix equal parts of self-raised flour and yoghurt together. Divide the dough into golf ball sized pieces and roll it out; cook it on a dry pan and when it's browned on both sides it's done.


Assemble the hummus, falafel and yoghurt on the flatbreads and dig in.
