Tear and share weekend brunch


ITS FINALLY THE WEEKEND!

Shakusha eggs in pulled chicken-mole - with avo, corinader and tzatziki

So easy. I used the leftover chicken mole for this to make sort of huevos rancheros- you could use any pulled pork/shredded chicken for this. I heated everything up on high just to make sure it was all cooked through.


  

Before making holes and dropping in the eggs. When they're almost cooked, cover the whole thing in cheese and put it under the grill until it bubbles.


While it cooks make the tzatziki - dice cucumber, add salt and natural yogurt. Once the eggs are done, cover with the avocado, tzatziki and coriander. So delicious.
