Crayfish-avo brioche rolls

YASSSSS (wait can you tell I've been watching too much Queer Eye on Netflix yet, hahah)

These crayfish-avo rolls are honestly amazing; Such a great and healthy snack full of all the good fats. Crayfish are delicious and it was only £4 for a load of them from Morrisons. I also buy the wonky avocados which come in packs of 6 so it's not even expensive to make these super fancy sandwiches.

The first thing I did was make myself some tartare sauce - I finely chopped pickles and capers and mixed them with 1tbsp of pickle juice and 4 tbsp of low-fat mayonnaise. Tartare sauce is so easy to make but just makes seafood taste about 2 times better - I love it.

All I did then was finely slice half an avocado, mix my crayfish and tartare sauce and assemble! I topped it off with some parsley just so if I breathed in my boyfriends direction he wouldn't pass out but it was also a delicious little flourish so whack some on top as well.


Seafood is the best because you can either have it and go the gym because it feels pretty light or you can go to the pub and lift some glasses of wine because it fills you up without sitting heavily. You don't get a horrid full feeling you just feel all nourished and can basically swan about feeling a bit smug.
