Life-crisis seriously cheesy baked rigatoni pie

So..I was having a terrible week and this was exactly what I needed - cheesy baked rigatoni. I thought someone else might be in the same situation so if this is you then let this ultimate cheese-feast improve your day a little. Desperate times call for 2 balls of mozzarella, 1/2 a block of mature cheddar and lots of Parmesan!

I needed the ultimate comfort food and this delicious monstrosity was created. Just look at its cheesy crown; The queen of mac and cheese.

If you want to make it, which you do...then you'll need to follow these steps:

Melt a large chunk of butter in a pan on low-heat until melted. Add sieved flour tbsp by tbsp and splashes of milk mixing until you have a roux. Then it is time for the cheese. Roughly tear a mozzarella ball and add it to the roux along side 1/2 block of grated mature cheddar.

Add grated Parmesan and double cream until the sauce is the a little runnier than you want it (it will thicken).

Keep it on a low heat until it looks like this...

The cheese sauce is done! Next cook the rigatoni and once al-dente put in a cake dish like so:

This actually doesn't take long and is really easy. Pour over the cheese sauce making sure that every bit of pasta is covered. Now it's time for the breadcrumbs. I made my own by blitzing some stale bread but you can use panko if you prefer. It's important to have the breadcrumbs because it means you can push the sauce down and further into the pasta so it fills the tubes completely.

Of course the next step requires...more cheese. Tear up another ball of mozzarella and cover your creation...

...followed by a Parmesan topping.

Then into the oven at 180 for 10 minutes until the cheese is bubbling and golden, like this...

Take off the cake casing (I had one of those adjustable ones that are easy to remove but don't worry if you don't because all the cheese forms a crust which makes it easier to get out).
