Tear and share weekend brunch


Shakusha eggs in pulled chicken-mole - with avo, corinader and tzatziki

So easy. I used the leftover chicken mole from the party to make a sort of huevos rancheros- you could use any pulled pork/shredded chicken for this. I heated everything up on high just to make sure it was all cooked through...


...before making holes and dropping in the eggs. When the eggs are almost cooked, cover the whole thing in cheese and put it under the grill until it bubbles.

Dice cucumber, add salt and natural yogurt. Once the eggs are done, cover with the avocado, tzatziki and coriander. So delicious.
